Friends and wine lovers alike are welcome to open the heavy iron
doors to the castles wine cellar. The shelves are fully socked with
Bordeaux wines and the scent of elegance is in the air.
Try a Chardonnay from Canada to go with a specially prepared fish
dinner.
To go with the venison file, try a 2003 Colsanto Ruris IGT
hailing from Umbria in Italy, with its fine fruit essences and well
structured palette. Or try a beautiful 1997 Barbaresco from a
wonderful year in Piemonte.
The castle's duck goes well with a 2002 Zinfandel Mother Clone
from grandmother's 90 year old wine stock in California.
To go with the various cheeses from all around Europe we could
possibly drink a Sauvignon Blanc, a Shiraz from "the New World" and
finish with something sweet from Austria, possibly a Trockenbeeren
Auslese.
Now comes desert! Try a Sauternes from the golden years of 96
and 97. Or, try a rival from the Loire Valley with the elegant
acidity and light honey flower sweetness of Chenin Blanc
grapes.
